starting the week right, eating healthy!

My good friend Ashley over at The Shine Project wanted to know what our family recipes were last week for her Friday challenge.  Since I have had a lot going on in the past few weeks cooking was not something that was going to take place! (friends,  I have never eaten so many Jimmy John sandwiches in one week.....they were amazing)

Welllllll, I still wanted to participate in Ashley's challenge so Sunday night I took some time to make a little healthy meal! My grandma is the one who helped me prepare and display this dish.  She has is for me each time I go to visit and I just find it delicious!

Very simple recipe to follow, actually it is not even a recipe.  This meal consists of almost anything you would like to eat.  As you can see from the pictures, fruits and veggies are a MUST! Not only are they great for your body and mind, but they also taste wonderful! Whole wheat bread or multi grain bread for some substance, and of course meat! This can be deli sliced meat, you can use chicken or steak....anything you desire!

Place the food nicely on a cutting board or platter, and VOLA you have a european style meal! This is great if you have company because people are able to choose what they would like. 

Eating healthy, especially at the beginning of the week, is essential.  It gets the mind and body revved up for the week.

Take a bubbly bath, go on a walk, head to the lake/ocean/pool!!! Summer time is approaching its last month so make the best of your weather no matter where you are living!!
